Steaks with Chipotle Sauce!

Serve with sweet corn and

crusty rolls from our bakery.

 



 
Makes 4 Servings
 

TIME: 25 minutes

Prepare Time: 10 min Cook Time: 15 min

 


 

INGREDIENTS:
  • 1(7oz) can Chipotle Peppers in Adobo Sauce
  • 1/2 cup Sour Cream
  • 1 Tsp Dried Cilantro Flakes
  • 4(8oz) New York Strip Steaks


     

    INSTRUCTIONS:~~~~~
    Chop one chipotle pepper and place in a bowl. Add 1 teaspoon of the adobo sauce. Stir in sour cream and cilantro; refrigerate.

    Grill Steaks, uncovered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness. Serve with the sauce.

    PORK CHOPS
    Pork chops are the most popular cut from the pork loin. From rib end to center loin to sirloin, boneless or bone-in, there’s a pork chop for every taste.

    • GRILLING TIPS - Chops are best prepared by grilling directly over the coals. For gas grilling, place food on the cooking grate after preheating and close the lid. Perfectly cooked chops will be almost firm to touch with a slight “give”. Also look for a slight blush of pink in the center and clear juices.
       
    • FLAVOR TIPS - During or after grilling, you can expand the flavor of any pork chop with simple sauces or toppings. Purchased sauces and salsas can be used “as is” or “doctored up”. Stir diced pineapple and fresh cilantro into your favorite salsa for a sweet and spicy flavor composition.
       
    • LEFTOVER TIPS - Make a salad with any leftover chops: Slice the meat thinly and toss with greens, halved grapes, toasted pecans and vinaigrette.
       
    • SAFETY TIPS - Cover a clean plate with plastic wrap to carry raw pork to the grill. Take off wrap; discard. Use the clean plate to carry cooked food from the grill to the table.

     

    Bacon Wrapped Barbeque Shrimp

    Prep Time: 20 Minutes

    Cook Time: 15 Minutes

    Yields: 3 Servings

     

    INGREDIENTS:

    16 Large Shrimp, Peeled and Divined

    8 Slices Bacon

    Barbeque Seasoning, to Taste

    Directions:

    ** Preheat oven to 450 Degrees

    ** Wrap shrimp with 1/2 Slice of bacon, securing with a toothpick. Be sure and use the large shrimp---the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little.

    ** Line a jelly roll pan with heavy duty foil, and place baking rack in pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning, turn and sprinkle second side. Let the shrimp sit for 15 minutes for the seasoning to soak it.

    ** Cook the bacon for 10-15 minutes, The rack keeps the shrimp from sitting in the draining bacon fat. The foil will make your cleaning up easier!




    Sirloin Caesar Salad

    Prep Time: Quick -- 5 min.

    Yields: 6 Servings
     


    INGREDIENTS:
         1 Pound Boneless Top Sirloin Steak

    1 Cup Caesar Salad Dressing

    1/4 Cup Dijon Mustard

    1/4 Cup Lemon Juice

    6(1 inch thick) Slices French Bread

    12 Cups Torn Romaine Lettuce

    1 Medium Tomato, chopped


    PREPARATION METHOD
       Place steak in a large resealable plastic bag or shallow glass container. In a bowl, combine salad dressing, mustard and lemon juice; set aside 3/4 cup. Pour remaining dressing mixture over the steak. Seal and cover and refrigerate for 1 hour, turning occasionally. Brush both sides of bread with 1/4 cup of the reserved dressing mixture. Grill bread, uncovered, over medium heat for 1-2 minutes on each side or until lightly toasted. Wrap in foil and set aside.

    Drain steak, discarding marinade. Grill, covered for 5-8 minutes on each side or until meat reaches desired doneness. Place romaine and tomato on a serving platter. Slice steak diagonally, arrange over salad. Serve with the bread and remaining dressing.

    A tangy sauce that combines bottle salad dressing, lemon juice and Dijon mustard flavors this filling main-dish salad!
